Tuna Pasta and Caesar Salad
Pasta - 3 cups (I used macaroni, you could use any kind of pasta)
Tuna - 1 tin (I
used the tuna in water that comes in a tin)
Garlic cloves -
10, chopped
Marinara Sauce -
about 8 tbsp. (In case you are using tomato puree, add about 3 to 4 tsp mixed
with water)
Black peppercorn -
2 to 3 tsp, crushed
Water - ¼ cup (for
the sauce)
Olive oil
Salt to taste
Parmesan cheese
for garnish
Parsley for
garnish
Method:
Bring water to
boil in a heavy bottom pan, adding along a drop of oil and salt. Now add in the
pasta and cook for about 9 to 10 min or till pasta is cooked. In the meantime,
chop the garlic and set aside. Now in a pan add oil, once hot add the chopped
garlic and sauté till you get a nice aroma, now add in the tinned tuna and sauté
for about 2 to 3 min (make sure you don't burn the garlic). Now add in the
pasta sauce/ tomato puree and sauté it till everything is mixed well. Now add
1/4 cup of water if using marinara sauce or use about 1/2 cup water if you use
puree. You may increase or decrease the water depending on how you like the
sauce to be thick or thin. once the sauce starts boiling, add in the crushed
pepper corn and mix well. After the pasta is cooked drain all the water and
then add the pasta to the sauce and mix everything till the pasta is nicely
covered with the sauce. Now transfer the dish into a serving bowl and garnish
with some crushed peppercorn, parsley leaves and Parmesan cheese. Serve it hot
along with salad/ grilled salmon or both.
Note: Using freshly crushed peppercorns enhances
the flavor than ready-made black pepper.
Caesar Salad
Lettuce - 1 cup,
chopped
Caesar dressing -
1-2 tsp
Croutons - 10
pieces
Parmesan cheese -
2 -3 tsp
Method:
In a bowl, add the
chopped lettuce, Caesar dressing, croutons and mix it well. Sprinkle in some
Parmesan cheese.
Note: You may also add boiled chicken and have
this as a meal in itself, to keep it light
