Egg Roast





Ingredients:
Egg - 4 nos. 
Onion -  1 large, sliced
Tomato - 2, chopped
Mustard seeds - ½ tsp
Green Chilli - 2 (or 1 depending on how spicy you like your curries) 
Ginger Garlic Paste - 1 tsp
Curry leaves- about 6 to 7 
Turmeric powder - ¼ tsp
Chili powder - 1½ tsp
Coriander powder - ½ tsp
Garam Masala - ½ tsp
Black Pepper powder - ¼ tsp
Water- ½ cup
Coriander leaves - hand full for garnish
Oil - 2 -3 tbsp.

Salt to taste

Method

Boil the egg and remove the shell once cool and set aside. Now in a heavy bottom pan, add oil and once hot add the mustard seeds and let it splutter. Next add the sliced onions along with a little salt and saute till golden brown,add in the green chilli, curry leaves and ginger garlic paste and saute. Next add the chopped tomatoes and cook till they are mushy . Add all the masalas and saute . Once the oil starts separating or sticking to the pan, add water and cook till the water evaporates. Slit the eggs in half and place it in the masala and carefully coat the egg. cover and cook for 1 min on low . Garnish with coriander leaves. Serve hot with paratha , chapati, dosa or appams.
