Vegetable Pulao


Serves 4 - 5

Ingredients:
Rice – 2 cups
Onion – ½ large, cubed
Tomato – 2, cubed
Capsicum – ½ Green, cubed (any color of your choice)
Frozen veg – ½ cup (I used frozen peas and carrot)
Green chili – 1, chopped
Ginger Garlic paste – 1 tsp
Cumin seeds – ½ tsp
Fennel Seeds – ¼ tsp
Whole gram masala – 1star anise, 6 cloves, 1-inch cinnamon stick, 2 bay leaves
Tumeric powder – ¼ tsp
Chilli powder – ¼ tsp
Garam masala – ½ tsp
Paav baaji masala – 2 tsp (any)
Saffron – a few strands
Coriander leaves – ¼ cup, chopped
Water – 1 cup
Oil
Salt to taste

Method:
Cut the onions, capsicum and tomatoes and keep aside. Cook the rice along with 3 cloves and a bay leaf and saffron. Once done drain all the water and keep aside. Now in a heavy bottom pan, add oil, once hot add cumin and fennel seeds and let splutter, add the whole garam masala ( 3 cloves, cinnamon, bay leaf and star anise) , add the onion and chopped green chili and sauté till it turns translucent. Now add the ginger garlic paste and sauté for a min. Now add the tomato and sauté till they become mushy. Now add the capsicum and frozen veggies (You can add any vegetable of your choice). Sauté this for about 5 min. Now add the masalas (turmeric, chilli, paav baji masala) and mix everything well. Add a cup of water and bring it to boil. Once you get a nice consistency (not watery), dd salt to taste. Now add the rice and mix everything well. Sprinkle Garam masala and mix. Garnish with coriander leaves. Serve hot along with any raita your choice.
