Spicy Chicken Curry


Ingredients: 
Chicken – about 1 pound (can use boneless too, I’ve used with bones)
Onion – 1 large
Tomato – 2 small
Green chilli – 2
Ginger garlic paste – 1 tsp
Mustard seeds – ½ tsp
Turmeric powder – ¼ tsp
Chilli powder – ¼ tsp
Cumin powder – ¼ tsp
Coriander powder – ½ tsp
Garam masala – ½ tsp
Coriander leaves – ¼ cup, chopped
Water – ¾ cup (I used ¾ cup because of chicken with bones, you may add less water depending on how much gravy you would like)
Salt to taste
Oil


Method:
Grind the onion, tomato and green chilli to a paste. Now in a heavy bottom pan, add oil once hot add the mustard seeds and let splutter, now add the onion tomato chilli paste and sauté, cook till it reduces and water is evaporated ( you may add a little salt to speed up the cooking), the more the paste is fried the better it will taste. Now add the ginger garlic paste and sauté for few mins. Add all the masala ( turmeric, chili, coriander, cumin, and garam masala) and cook well. Add the chicken and sauté for 4 to 5 min. Add water and sauté, cover and cook till chicken is done and oil starts separating. Garnish with chopped coriander leaves, Serve hot with naan, chapatti or paratha.
