Chicken in Spicy Onion and Tomato gravy



Serves 4 

Ingredients:

Chicken drumsticks – 8
Onions – 1 large, 1 small or 3 medium (grind to a paste)
Tomato – 3 small, chopped
Mustard seeds – ½ tsp
Ginger garlic paste – 1 tbsp
Oil – 3 tbsp
Turmeric powder – ¼ tsp
Chilli powder- 2 tsp
Coriander powder – ¾ tsp
Garam masala – ¾ tsp
Water – 1 cup
Black Pepper – ¼ tsp
Coriander leaves to garnish
Salt to taste 

Method
First grind the onion into a paste and chop tomatoes and keep aside. Now take a heavy bottom pan and add oil. Once the oil is hot add the mustard seeds and let it splutter, now add the ground onion and saute till the water evaporates. Now add in the ginger garlic paste and saute for a min or two, and then add the chopped tomatoes and saute till the tomato is mushy. Please note the more you fry the onion and tomato the better the taste. Now add all the masala (turmeric, chilli, garam, coriander powder) and saute it well,sprinkle some salt and cook this for 3 to 4  min stirring from time to time so the masala don't stick to the pan. Now add in the chicken and coat it with the masala and cook for about 5 min. Now add the water, mix everything together and cover and cook till chicken is done. Keep stirring from time to time since the masala will settle down. once the chicken is cooked, add the black pepper and mix, garnish with coriander leaves and serve hot with arabic bread, chapati, naan or layered paratha.
