Pepper Chicken




Serves: 4

Ingredients

Coconut oil – 2-3 tbsp
Onion – ½ large
Green Chili – 1½
Ginger Garlic paste – 1 tsp
Tomatoes- 1 ( chopped)
Tumeric powder – ½ tsp
Chilli powder - ½ tsp
Coriander powder – ½ tsp
Cumin powder – ½ tsp
Garam masala – 1 tsp
Paprika – ½ tsp
Chicken - 1.5 lbs
Coriander leaves – ½ cup ( leave some for garnish)
Crushed black pepper- ½ tsp
Water- 2 to 3 cups
Salt to taste

Method:

Grind the onion and chili, keep aside. Now heat coconut oil in a pot and add the grinded mixture and sauté till it reduces to half and oil starts separating. Now add the ginger garlic paste and sauté till smell goes. Add the chopped tomatoes and mix well till the tomatoes become pasty. (Note: if the onion and tomato mixture get stuck to the pot sprinkle little water and mix). Add all the masalas turmeric, chili, coriander, cumin and garam masala) and mix well. Now add the chicken and coat all the masala, keep mixing for 2 min. Now add water. Add salt to taste. Cover and cook till chicken is done. Once chicken is almost done. Add paprika powder and the crushed pepper. Finally add the chopped coriander leaves and mix. Garnish with some coriander on top. Serve hot.

Note: Can be served with chapatti, paratha, naan.
