Kadai Paneer

Version 1



Serves- 3-4


Ingredients:

Cloves - 2
Fennel Seeds – 1 tsp.
Cumin seeds – 1 tsp
Pepper corns - 5
Coriander Seeds – 1 tbsp.
Cardamom powder – ¼ tsp
Poppy Seeds – ¼ tsp
Cashew nuts – 2 tbsp.
Onions- 1 large to grind and half diced
Pepper (Capsicum) - ½, diced
Tomato - 2 small, chopped
Oil – 1 tbsp.
Ghee – 1 tsp
Green Chilli- 1 (slit in half)
Ginger garlic paste – 1 tsp
Paneer – 1 cup
Salt to taste

Method:

Roast coriander seeds, cumin seeds, fennel seeds, cloves, pepper corns, poppy seeds in a heated pan for about a minute and let the mixture cool. In the meantime heat some oil in a pan, add sliced onions and sauté, since this takes time, grind the dry roasted seeds to make a smooth powder and let rest. Once the onions turns brown, add the tomatoes and cook till the tomatoes turn soft and mushy to increase the speed of cooking add salt and mix everything well. Now add the cashew nuts and mix for a min. Next put the onion mixture in the grinder along with the powdered spices and a green chilli and grind to a smooth paste.

Once the mixture is ready keep aside, now put ghee in the same pan and add ginger garlic paste and sauté. Add the diced onions and capsicum and mix well. Now add the paneer and sauté for about 2 min, once the onion turns translucent add the ground masala paste and cook everything together. Add ½ cup water, salt to taste and let it boil. Finally add chopped coriander leaves. Serve hot with Naan or Chapati.




Version 2



Serves 4

Ingredients:
Paneer - 500 gms, cubes
Onions - 1 medium, ½ chopped and ½ diced
Green Pepper - 1, diced
Tomato - 3 large, chopped
Green Chilli - 1, chopped
Coriander seeds - 1 tsp
Dry red chilies - 5-6 
Garlic - 5 cloves, chopped
Turmeric powder- ¼ tsp
Coriander powder - ½ tsp
Garam Masala - ½ tsp
Chilli powder - ¼ tsp
Cumin powder - ½ tsp
Dry Kasoori methi - 1 ½ tsp, crushed
Sour cream/ heavy cream - 1 tbsp. (I used sour cream)
Oil - 1 ½ tbsp.
Salt to taste
Coriander leaves for garnish

Method:
Dry roast coriander seeds and dry red chilli, make sure you don't burn it. Once the coriander seeds become brown, turn off the gas and let in cool . In the mean time, Cut the onion, green pepper,and tomatoes and set aside. Grind the coriander and chili powder to a fine power . Now in a heavy bottom pan heat oil, now add the chopped garlic and saute for 30 sec, now add the chopped green chili and chopped onion and saute till onions are translucent. Now add the ground mixture and saute. Now add the chopped tomatoes and cook till they are mushy. Now add all the masala powders ( turmeric, chili, coriander, cumin, garam masala) and crushed dry kasoori methi. Mix all these well and cook till it starts boiling. You can add quarter cup water at this point and let it simmer. Now in a pan, add a little oil and saute the diced onions and green pepper. Saute till the onions are translucent. Now add this into the gravy mixture and saute till everything is mixed well. Add the sour cream/ cream into the mixture and mix it well Add the paneer cubes into the mixture. Finally add the paneer cubes and mix it gently so that the paneer doesn't break. Pour the gravy into a serving dish and garnish with coriander leaves. Serve hot with naan or roti.
