Upma/ Semolina

I learned this recipe from my dearest MIL who is an amazing cook herself. I make this recipe almost all weekends, its quick , easy and super yummy smile emoticon

Upma

Ingredients:

Oil - 2 tbsp.
Mustard Seeds - 1/2 tsp
Onions- 1/2 medium or 1/4 large, chopped
Green Chili - 1 (depending on your spice level), chopped
Curry Leaves - 5 to 6 leaves
Cashew nuts – ½ cup
Milk - 2 ½ cups
Rava (Semolina) – 3/4 cup ( I used roasted rava)
Hing (asafoetida)- a pinch or 2
Ghee – 1 to 2 tsp.
Salt to taste

Method:

Heat oil in a heavy bottom pan, once hot, add the mustard seeds and let it splutter, then add the chopped onions, green chili, cashew nuts, curry leaves and stir till onions becomes translucent and cashews are golden brown. Add the milk, hing and salt to taste, once the milk comes to a boil add the rava (roasted) and mix, add the ghee and keep mixing till the milk starts evaporating and you get a nice creamy consistency. Serve hot.

Note: Serve upma with banana.
