Pasta in Red Sauce




Serves – 2 - 3

Ingredients

For Pasta:
Pasta (any kind, I used two kinds) - 2 ½ cups
Water - 6 cups
Salt – ½ tsp
Oil – 1 tsp

For Sauce:

Tomato Sauce – 1 cup (I got the readymade pasta sauce)
Garlic – 2 tbsp., chopped (6 cloves)
Pepper (Capsicum) – Red/ Green/ Yellow any of your choice – ½ chopped 1 inch 9 I used red pepper)
Water – 1 ¼ cup
Parsley – ½ tsp
Peppercorns – 1 tsp crushed
Bacardi – 3 tbsp. (optional)
Olive oil – 1 ½ tbsp.
Mozzarella Cheese – sprinkle on top and bottom of the baking dish. ( I used low fat cheese)



Method:

Boil the water in a deep bottom pan, once it comes to boil add salt and oil, and then add the pasta , cover and cook pasta for 11 min and strain the pasta. while the pasta is cooking, in another deep bottom pan, heat oil and add the chopped garlic and sauté till you get a nice aroma, add the chopped pepper and sauté for 2 min, add the Bacardi and mix (be careful while adding, if in a gas stove it can light up ), now add the tomato sauce, crushed peppercorns and parsley and mix all of the ingredients well . Add water and let it boil for a bit when you get the consistency you want add the pasta and mix well for 2 min. Now in a baking dish sprinkle some mozzarella cheese in the bottom and add the pasta over it and sprinkle some cheese on top of the pasta and bake this in the oven for about 5 min till the cheese melts and gets slightly brown. Serve hot.


Home made Pasta Sauce

Ingredients:
6 Roma tomatoes
7-8 garlic cloves 
1/4tsp oregano
1/4tsp crushed peppercorns
1/4tsp crushed red chilli (chilli flakes)
1/4 large onion, chopped
1/2 green and red pepper, sliced 
Olive oil
Salt to taste 

Method:
Grind tomato and garlic and keep aside . In a pan heat oil, add the onion, oregano and chili flakes ( make sure it doesn't burn , so cook in low heat). Once you get the smell of oregano, add the red and green pepper and sauté for about 2 mins and then add the tomato paste, increase heat to medium , mix everything and cover and cook till tomato sauce reduces or becomes thick. Cook pasta al dente and then transfer it to the sauce once it's done cover and cook for about 5 min so that pasta gets the flavor of the sauce. 
While adding salt if u add too much in the sauce don't add in the pasta. You can increase or decrease flavor or spice according to your taste. Add little at first and then if need add more.
