Palak Chicken


Serves: 3 to 4


Ingredients: 
Chicken Breast – 2, Diced
Onion – 1 large
Tomato – 1 small
Green Chili – 1 or 2, depending on spice level
Cumin Seeds – ½ tsp
Fennel seeds – ¼ tsp
Bay leaf – 1
Cloves – 2-3
Ginger garlic paste – 2 tsp
Palak (Spinach) – 5 handful
Cumin Powder – ½ tsp
Tumeric Powder – ¼ tsp
Coriander Powder – ½ tsp
Garam Masala- 1 tsp
Chili Powder – ¼ tsp
Water – ½ cup for gravy
Coriander leaves to garnish
Salt to taste

Method: 
Grind the onion, tomato and green chili and keep aside. Add water in a pan and spinach and boil for 5 min. immediately cool it down with cold water, strain and grind the spinach to a puree and keep aside. Now in a heavy bottom pan add oil, once hot add cloves, bay leaves, cumin seeds, fennel seeds and let splutter. Now add the ground onion mixture and sauté till it becomes half. Now add ginger garlic paste and sauté for 3 min. Now add all the masala’s (cumin, turmeric, chili, coriander, and garam masala) and mix for about 4 to 5 min (sprinkle water in case the masala gets stuck to the pan). Now pour the spinach puree and mix well with the masala. Add chicken and salt to taste and water. Cover and cook till chicken is done and you get a nice gravy consistency. Garnish with coriander leaves Serve hot with chapati or naan.
