Mushroom Pasta


I got this recipe from my MIL. Its a quick, easy and yummy recipe.

Serves 2
Ingredients
Pasta – 2 ½ cups
Mushroom – 230 gms, chopped very small
Onion – 1 large
Dry red chilli – 3
Oregano – 1 tsp
Ajwain – 1 tsp
Cheese slice – 3 (I Used low fat cheese slice)
Milk – ¾ cup
Parsley – garnish
Parmesan cheese – garnish
Oil – 2 tsp
Water
Method:
Grind the onion along with the mushroom stems, red chilli and ¼ cup water. Now in a heavy bottom pan add oil, once the oil heats up add ajwain and oregano (make sure it doesn’t burn), once you get a nice smell, add the onion mixture and cook till the water evaporates. Now add the mushrooms (chop the them really small) and cook till mushrooms is cooked well. Now add the cheese slices and sauté till the cheese melts. Keep aside. Now in another pan boil water and add pasta and cook on medium for 10 to 11 min. While the pasta is cooking, add the milk into the mushroom and let it come to boil. Once pasta is done, add the pasta into the mushroom sauce and mix well. Serve hot, garnish with dry parsley and Parmesan cheese.
Note: Serve immediately after you make this dish, because if it gets cold it will become dry because of the cheese. You can also use 1 tsp of chilli flakes instead of the whole dry red chilli.
