DIWALI SPECIAL! Besan Laddoo



Makes about 12 laddoos

Ingredients:

Besan (Gram flour)  – 1 ½ cup
Sugar – ¾ cup ( I used low fat sugar)
Ghee – ¼ cup
Cardamom powder – ½ tsp + ¼ tsp ( garnish)
Almonds – chopped for garnish
Butter- enough to coat the plate

Method:

Since I dint have gram flour at home , I put 1½ cups of raw chickpeas in a grinder to form a fine powder. After that, I sieved the powder and threw away the big pieces, or else if you have ready made gram flour use that.

Now heat some ghee in the pan once hot add the gram flour to this mixture and cook well to make a nice even brown mixture, the mixture will start to fluff up a little , keep stirring it till you get a strong nutty fragrance and then take the pan off from the stove and keep aside. Let this cool down a little, while its warm, add the sugar and cardamom and mix it well (it may still be semi liquid). After mixing it transfer it into a plate (coat the plate with butter), add the chopped almonds and cardamom. Let this cool down completely. Once cooled start making the laddoos, in case it is still soft, just make the laddoos and then keep it in the refrigerator to set for about 15-20 min as this will harden the ghee and you can then reshape the laddoos to make a perfect round, Shelf life of this is should probably be about a month in an air tight container .
