Fried Rice



Serves – 3-4

Ingredients:

Rice- 1 ½ cups
Frozen peas and carrot – 1 cup (you can use fresh carrots, peas , cabbage, beans)
Pepper (capsicum) – ½, chopped
Spring onion – 2 tbsp.
Garlic- 2 tbsp, chopped
Soya sauce – 3 tsp.
Sriracha chili sauce- 2 tsp
Olive oil
Egg – 2 (one yolk and 2 whites)
Salt to taste

Method:

In a bowl add the rice and wash till you get clean water (about 4 to 5 times) and soak for about 20 min. In the meantime chop the capsicum ( or carrots and other veggies) and keep aside ( if using frozen carrot and peas, wash till the ice melts and strain and spread them a few kitchen napkins so it doesn’t get mushy). After 20 min strain the rice, boil 5 cups of water in a deep bottom pan and let boil. When water starts boiling add the rice along with 1 tsp of olive oil and cook the rice for about 10 min. Now strain the rice and pass some cold water over the cooked rice and keep aside so the water strains completely .Now in another heavy bottom pan add olive oil, once hot add the chopped garlic and once it stars turning light brown add the capsicum, spring onions (leave some for garnish), and frozen veggies and sauté for about 6 to 7 min. Now add the soya sauce and chili sauce and sauté. Add the rice and mix it well with the sautéed veggies, also add a little oil and salt to taste. Now whisk the eggs in a bowl along with ¼ tsp soya sauce and chili sauce and make an omelet cooking both sides, and cut the omelet into small squares, mix some with the rice and leave some to garish. Finally transfer to a serving dish and garnish with spring onions and eggs.

Serve hot along with any Manchurian gravy.
