Eggplant/ Brinjal/ Baingan Pasta

I got this pasta recipe from my awesome Mom in law who is an amazing cook herself. She had tried this first and then shared the recipe with me. I tried it and ABSOLUTELY LOVED it!! And so, I thought of sharing this recipe with you all.



Serves 2-3

Ingredients :
Brinjal/ Eggplant/ Baingan - 1 large ( or 2 long )
Macaroni pasta - 2 cups
Onion - 1/2 medium or 1 small , chopped
Tomato - 1, chopped
Garlic cloves - about 10 to 12, chopped
Dried Basil - 1 tsp (you can use fresh basil too, I only had dried basil)
Dried Parsley - 1 tsp (you can use fresh parsley too, I only had dried parsley)
Italian Seasoning - 1 tsp
Green Chili - 2 ( or more depending on how spicy you like your dishes)
Red Chili flakes - optional, in case you add less green chili but still want it to be spicy you may add the flakes.
Cheese slices - 2 to 3 , ( I used slim cheese)
Oil
Salt to taste

Method:
First roast the eggplant in the oven or fire top till the insides are nicely cooked. In the mean time make the macaroni and keep ready . Once the eggplant is cooked. In a pan add oil and once hot , add the garlic saute it ( don't let it burn). Next add the onion and green chilli and saute till onion becomes translucent. Now add in the tomato and cook till it becomes mushy. Next after removing the skin from the eggplant add it into the onion garlic and chilli mixture and saute well. Now add in the seasoning ( basil, parsley and Italian ), salt to taste and saute everything well. Crush the eggplant with the back of the spoon till u get a nice consistency. Once its ready, add in the macaroni and mix everything well.  Finally, tear the cheese slices into four parts and add it to the macaroni, and mix it lightly till the cheese melts. Do the final tasting and adjust the salt and spice (by adding red chili flakes if necessary). Serve hot.
