Mexican Brown Rice Salad


Serves 3 to 4

Ingredients:
Brown Rice - ½ cup
Yellow Pepper- ½, chopped
Onion - ½, chopped
Tomato - 1, chopped
Corn - ¼ cup
Black beans - ¼ cup
Green Chilli - 1, minced
Lime - 1
Chipotle Sauce – 2 tbsp. (or more depending on your liking)

Method:
Cook the brown rice and keep aside. In a mixing bowl add all the ingredients along with the rice and mix well. Add the chipotle sauce and mix everything well.
