Chicken/ Mushroom Quesadilla
Serves- 2
Ingredients:
Onion – 1, sliced
Capsicum (pepper) – ½, sliced (I used orange, you can use any)
Fajita seasoning – 1 ½ tbsp.
Chicken / mushroom – 1 cup (chopped)
Tortilla - 4 (I used the ready made wheat tortilla)
Mexican cheese – 2- 3 tbsp for each tortilla (I used low fat cheese)
Butter – I used low fat butter spray
Oil

Method:
Add a little oil in a pan, once hot add the onions and sauté till they become translucent, now add the capsicum and cook for 4 to 5 min, now add the chicken and cook for about 5 min and then add the fajita seasoning and cook till chicken is done and the water has evaporated ( do not add water as the chicken will cook in its own water).
Now in a pan add a little butter and add the tortilla. Now one side spread the fajita filling and top it with cheese, now fold the other side and press, carefully flip the tortilla so the cheese side is facing down, and press to melt cheese. Serve hot along with sour cream as a dip.

NOTE: Vegetarians can replace the chicken with mushrooms.
