Black-eyed beans / Chowli / Lohbia ki Sabzi

So I recently bought these black-eyed peas to make Olan, which is a South Indian dish. Since it was just sitting around I decided to make a sabzi out of it and it turned out super yummy. Hope you enjoy it as much or more as I did :) 



Serves 2 to 4

Ingredients

Onion- ½ large, chopped
Tomatoes - 2, chopped
Potato- 1, cubed
Cumin seeds - 
½ tsp
Coriander powder - 
1 tsp
Cumin powder -½ tsp
Garam masala - 
½ tsp
Chaat masala - 
½ tsp
Turmeric powder - 
¼ tsp
Chili powder - 
1 tsp 
Ginger garlic paste - 
1 tsp 
Black-eyed beans - 1
 cup
Water - 2.5
Oil - 
3 tbsp.  
Coriander leaves for garnish
Lime juice- squeeze ½ a lime
Salt to taste

Method:

Soak the black-eyed peas overnight.

In a pressure cooker, add in the oil, once hot add the cumin seeds and let it splutter. Add the chopped onions and saute till translucent. Next add in the ginger garlic paste and saute for a min and then add the chopped tomatoes. Saute till the tomatoes are mushy ( you can increase the process by adding little salt) . Once the tomatoes are mushy add in the masala ( turmeric, chili, cumin, coriander, garam & chaat masala, and mix every thing together till oil starts separating. Drain the water from the black-eyed peas wash it again drain the water and hen add the black-eyes peas into the masala, Coat it with the masala and saute for a min. Add in 2 cups of water and cover the the cooker and cook on medium heat . Let the whistle blow about 5 to 6 times and then switch off the stove and let the pressure go out automatically.
Once cooled down, turn on the stove again and add in the cubed potatoes , coriander leaves (leave some for garnish) , lime juice, half cup water and salt to taste. Cover and cook for another 3 to 4 whistles turn of stove again and let the pressure come out automatically. ( Doing this step will blend all the masala well with the beans and potato). Once again let the pressure ease out automatically. If the gravy is too watery, let this cook till little water evaporates and you get the right consistency, check the salt at this time. Garnish with coriander leaves Serve hot with chapati ( thick gravy) or rice ( you can skip the last step and let the curry have a little more gravy).
