Aloo Methi (Potato and Fenugreek leaves)
Serves 2- 3
Ingredients
Aloo/Potato - 2, cubed
Methi / Fenugreek
leaves - 2 cups, chopped
Jeera/Cumin Seeds - 1
tsp
Ginger Garlic paste-
2 tsp
Turmeric powder - ¼ tsp
Chili powder - ½ tsp
Coriander powder – 2 tsp
Oil – 3 tbsp.
Salt to taste
Method:
In a pan add oil and
let it heat up. Now add jeera once it starts to splutter add ginger garlic
paste and then add the methi leaves. Now sauté for about 2 min, now add the
potato and mix it well with the leaves. Add all the masala (turmeric, chili and
coriander powder) and mix everything well. Now cover and cook in medium heat
till potatoes are done. From time to time keep checking and mixing so that the
leaves don’t stick to the pan. While mixing be careful not to crush the potatoes.
Serve hot with chapatti.
